Man skinning a snake outside a Sham Shui Po snake restaurant, Kowloon. This always draws a crowd on the street where the performance is probably intended to attract clientele.

Snake is especially popular with Chinese in colder months because it is considered a warming meat, as is dog. Before skinning and butchering the snake, the vendor will remove the gall bladder to make snake bile which will be mixed with liquor and sold as a medicinal tonic.
